Vegetable stew: comfort food

Recently I have taken a liking for vegetable stew. The best part of this stew is it is easy to cook. With a clingy toddler around, I keep looking for recipes that do not take much time and effort and at the same time are healthy too. So, here is my recipe for the way I make vegetable stew. The recipe comes mostly from my mother, with a few changes from my side.

Preparation time 5 minutes

Cooking time 15 minutes

Serves 4


Raw Papaya cut into cubes 1 cup

Raw Banana cut into cubes 1 cup

Carrots cut into cubes 1 cup

Zucchini cut into cubes 1 cup

Brinjal cut into cubes 1/2 cup

Bell pepper cut into cubes 1/2 cup

French beans roughly chopped 1/2 cup

Sweet potatoes cut into cubes 1/2 cup

Tomatoes cut into cubes 1/2 cup

Onions sliced 1 large

Cumin powder 1 teaspoon

Coriander powder 1 teaspoon

Turmeric powder 1 teaspoon

Salt 1 tablespoon

Black pepper 1 teaspoon

Butter/ Ghee 2 tablespoons

Dates 5-6


Take a large wok and add two tablespoons of butter/ ghee. Add in all the vegetables – raw papaya, raw banana, carrots, zucchini, brinjal, bell pepper, French beans, sweet potatoes, tomatoes and onions. Add salt and turmeric, pepper, cumin and coriander powder. Now stir fry all the vegetables for 5 minutes. Take care that the vegetables do not get burnt. Now transfer the whole contents into a pressure cooker or a large pot. Add 2 cups of water/ vegetable stock/ chicken stock. If you are using a pressure cooker, let it cook until you hear two whistles. If you wish to slow cook in a pot, you can add 2 cups of water to the vegetables and let it simmer in the pot for 1 hour. The stew is ready to eat. Garnish with dates and serve hot.

This stew is loaded with all kinds of vegetables and you can take the liberty to add more vegetables of your choice or the ones available with you. I also add mushrooms to this stew sometimes. The stew can be eaten as it is or paired with any kind of bread. With all the goodness of the vegetables, it is an ideal immunity booster too besides being a filling and wholesome meal.
